Gluten free almond & date clusters

If you are a big snacker like I am, then you are probably looking for healthier alternatives. The problem is that most of these healthier options cost a small fortune when they are store bought, which is why I decided to share this simple 6 ingredient recipe. These clusters may not be the most aesthetically appealing, but I promise your taste buds will thank you.

Next time you are craving something sweet, put down the "high fructose corn syrup/low fibre treat", and pick up these clusters. They will leave you feeling energized thanks to all the antioxidants, vitamins, and minerals that are packed in each bite.

The dates provide a nice smooth texture while the almonds and pumpkin seeds provide a satisfying crunch. As long as they are kept in the freezer, these treats will be good to eat for many months... but I guarantee they will be gone within days.

Ingredients: 2 cups sliced almonds

3/4 cup ground chia seeds

1/2 cup pumpkin seeds

2 cups pitted dates

4 tablespoons coconut oil

sea salt to taste

Instructions: 1. In a food processor, mix all the ingredients (except sea salt) until smooth.

2.Take 1 teaspoon (or tablespoon depending on your desired portion size) and roll the mixture into a ball. Flatten out ball with a spatula and place on a tray lined with greased parchment paper.

3. Sprinkle a little bit of sea salt, cover tray with saran wrap, and leave in the freezer.

Happy snacking!
