Protein Packed Cottage Cheese Pancakes

Why make regular pancakes when you can make these delicious cottage cheese pancakes? (or as my grandmother likes to call them in Russian, "sirniki"). They are packed with protein, lower in carbohydrates (for those on ketogenic diets), and they won't leave you starving before your next meal. In my opinion, they taste just as delicious when they are cold. Why not batch cook and have them ready to go for those early rush hour mornings.


Serves 4

1 cup pressed dry cottage cheese

1/3 cup all purpose or whole wheat flour

2 eggs

1 tablespoon sugar (or sugar substitute like Stevia)

2 tablespoons coconut oil

pinch of salt

1 teaspoon vanilla extract (optional)

Optional: top with low fat sour cream and drizzle with honey

In a large bowl, combine all of the above ingredients (except oil) until smooth.

In a nonstick frying pan, heat 2 tablespoons coconut oil. Fry pancakes on each side until they are a nice golden brown colour.

Serve with a dollop of sour cream, fruit, and/or honey.
